Shrimp and Peanut Stir-Fry with Brown Rice

Ingredients
- 1 lb shrimp, peeled and deveined
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1/2 cup peanuts, roasted and salted
- 2 green onions, thinly sliced
- 1 cup brown rice
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp honey
- 1 tbsp sesame oil
- 1 tsp cornstarch
- 1/2 tsp garlic powder
- 1/4 tsp black pepper
Instructions
- Cook brown rice according to package directions. In a small bowl, whisk together soy sauce, rice vinegar, honey, sesame oil, cornstarch, garlic powder, and black pepper. Heat 1 tbsp of oil in a wok or large skillet over medium-high heat. Add shrimp and cook until pink and opaque, about 3-4 minutes. Add bell peppers and cook until slightly softened, about 2-3 minutes. Pour sauce over shrimp and vegetables and cook until thickened, about 1-2 minutes. Stir in peanuts and green onions. Serve over brown rice.
