Ingredients
- For the Chicken:
- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
- 2 tbsp olive oil
- 1 tbsp dried oregano
- 1 tbsp dried basil
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
- For the Tzatziki Sauce:
- 1 cup plain Greek yogurt
- 1 cucumber, grated and squeezed to remove excess water
- 2 cloves garlic, minced
- 1 tbsp fresh dill, chopped
- 1 tbsp lemon juice
- Salt and pepper to taste
- For the Bowl:
- 1 cup cooked white rice
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/4 cup red onion, thinly sliced
- 1/4 cup Kalamata olives, pitted
- 4 oz feta cheese, crumbled
Instructions
- Marinate Chicken: In a bowl, combine chicken pieces with olive oil, oregano, basil, garlic powder, onion powder, salt, and pepper. Marinate for at least 15 minutes.
- Cook Chicken: Heat a skillet over medium-high heat. Cook the chicken until browned and cooked through, about 5-7 minutes.
- Make Tzatziki: In a bowl, mix together Greek yogurt, grated cucumber, minced garlic, chopped dill, lemon juice, salt, and pepper. Refrigerate until ready to serve.
- Assemble Bowls: Divide cooked rice among bowls. Top with chicken, cherry tomatoes, cucumber, red onion, olives, feta cheese, and a generous dollop of tzatziki sauce.
